Have a strawberry shortcake for breakfast: Fill a split corn muffin with sweetened ricotta, honey and sliced strawberries.
Not bad having dessert for breakfast. The corn muffins I had were a bit sweet. I added just a bit of sugar to the ricotta and drizzled this with a bit of special honey I bought from Filoli Gardens (which had somewhat of a flowery taste). Alas, the strawberries I used weren't sweet enough for me, I wish I had maybe let them sit with some brown sugar for a bit before adding them to this dish.
But again, dessert for breakfast was perfect on a hectic day!
