Okay, before you say "so not a recipe"...Barbie2Be and I came across the cookbook Grilled Cheese: 50 Recipes to Make You Melt by Marlena Spieler in the discount section at Barnes & Noble. We both had to get it, and yes, there is a recipe for this in the book. Except the book calls for good quality white bread, mature Cheddar cheese and kosher dills. Not having that on hand, needing a quick breakfast before Mr. L and I did errands one weekend, I made this instead. Quite yummy actually. Quick, easy, no hassle, tasty. My kind of Saturday breakfast.
Grilled Cheese With Cheddar and Pickle
1 Whole Wheat English Muffin split in half
Cheddar Cheese sliced in strips
Dill pickle slices
butter
Butter the muffin slices. Toast briefly. Cover each half of muffin with slices of cheese. Broil until cheese is melted. Take from oven and add a slice of dill pickle. Serve immediately.
So even though I didn't use an exact recipe from this book, I did use the one recipe for inspiration so I'm going to check it off the list as having cooked something from the book. There are actually lots of interesting recipes to try...panini, tuna melts, sandwiches...all sorts of ideas to use bread and cheese.
