this is beautiful. and I never thought of pairing beets with caraway!


I share your disdain for beets. I'd be willing to try this but I'd still be skeptical. Alexis loves the things so I know she'll love it.

Beets may grow on you just yet. So many people hate them because they associate them with only the canned variety. But fresh ones like this that are roasted until caramelized are just a revelation. Try the roasted beets next time with a little dab of goat cheese and some toasted walnuts. That's a winning combo, too.
