I choose this dish because Mr. L saw it on the cover of the Hawai'i's Best Local Desserts cookbook, pointed to it and said "make that" without even knowing what was in it. My photo isn't as nice as the one on the cover but it sure tasted good.
Both of The Men Behind The Wheel said I could make this anytime I felt like it as long as I shared. Same thing with Mr. L, his coworkers and The Right Hand Woman. Mom gets her piece soon.
I would have liked a bit more direction. Cream cheese at room temperature etc. And I wasn't sure if I should prep the bottom of the pan with butter or something, it did stick a bit but I was able to wedge a spatula in there enough to not ruin the pieces when I took them out of the pan.
BANANA CREAM DELIGHT
Crust:
2 cups flour
1 cup butter or margarine (2 blocks)
1 cup macadamia nuts, chopped fine
Blend flour and butter with pastry blender. Mix in 3/4 cup of the nuts, reserving 1/4 cup to sprinkle. Press into 9x13-inch pan. Bake at 350 degrees for 25 minutes, or until golden brown. Cool.
Middle Layer:
1 package cream cheese (8-oz)
1 cup powdered sugar
1/2 container of Cool Whip (half of 12-oz)
4-5 bananas
Beat cream cheese and powdered sugar until blended and smooth. Mix in Cool Whip. Spread over cooled crust. Slice bananas evenly over cream cheese layer.
Top Layer:
2 packages instant vanilla pudding (3-oz each)
3 cups cold milk
remaining Cool Whip
Whip pudding with milk and spread over bananas. Be sure to seal all edges. Spread remaining Cool Whip on top. Sprinkle with reserved macadamia nuts. Refrigerate. Chill several hours to set before serving.
Note: No serving size listed but this makes a pretty big batch.
Note: They didn't have a 12-oz Cool Whip so I bought the 16-oz and estimated how much to use. I used whole milk. I also used all five bananas so I'd get five just in case (it depends on how big you slice them but you don't want to run short). I used real butter.
Note: Didn't have a pastry blender. Tried the two knife method and then said screw it and used my Kitchen Aid. Kept the butter cold (actually I set two sticks of butter out sort of automatically with the cream cheese to soften and then decided to use two right of the fridge instead).
This was pretty simple and easy and went over real well. I definitely want to try all the other versions (Chocolate Delight, Pineapple Delight etc).

I have been waiting. Oh my, that looks sooo good.

hat is so delicious! Very rich. I only ate part of it first and then I'll eat the rest tomorrow with my lunch. Must be careful with those toothpicks. Almost choked on one. Needs to be eaten soon after fixing as bananas become over ripe. But it was still good.
